Traditional recipe with a futuristic spin from the homeland of Chef Ko’s family heritage, County Cary Ireland.

Ingredients
For Ground Taco ME’EAT
- 1 Bag RollinGreens Ground Taco ME’EAT
- 2 cups water
- 2 tbsp olive oil
For Ground Taco ME’EAT
- 3-4 golden potatoes
- ¼ cup sour cream (optional dairy free alternative)
- 1/8 cup half & half (optional dairy free alternative)
- ¼ stick of butter (optional dairy free alternative)
- 1 Fresh garlic clove
- 1 tsp salt
- Fresh chives
For the Sautéed Vegetables
- 1 tbsp olive oil
- 1 onion
- 3 sticks celery
- 2 carrots
- 1 can or bottle of Lager or Pilsner Beer
Instructions
- For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
- Add the entire contents of the Ground Taco ME’EAT and stir well.
- Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
- For the mashed potatoes, in a large pot, boil water with salt. Wash potatoes with a scrub brush. Once the water is up to a boil, add the washed potatoes. Cook until fork tender (20-30 minutes). Chop garlic fine and add 1 t salt to it and smash it into the garlic, making garlic paste and place in a large mixing bowl. Remove the skin of the potatoes and add to bowl. Mash, then add the remaining ingredients that are under the Mashed Potato section. Mash until smooth. Preheat oven to 400 degrees F.
- For the vegetables, cut celery and carrots into ¼ inch pieces and set aside. Cut your onion into 1/2-inch cubes. In a Large cast iron pan, add 1 tbsp olive oil to the pan once hot. Add onion and reduce the heat to medium. Stir every minute or so until onions are brown, then add carrot. Cook for 3-5 minutes, then add the celery. Stir every minute for 3 minutes. Add 1/3 of beer and stir to deglaze the vegetables.
- For the pie, add cooked Ground Taco ME’EAT to vegetables and mix. Place mashed potatoes on top of the vegetable and Ground Taco ME’EAT mixture. Bake for 15-25 minutes, or until the top is golden brown.
