Mini Taco Smashers

Mini Taco Smashers GROUND TACO

Mini corn tortillas stuffed with RollinGreens Ground Taco ME’EAT and cheese served with your favorite hot sauce or salsa. 

Serves 1-2 People


For Ground Taco ME’EAT

  • 1 Bag RollinGreens Ground Taco ME’EAT
  • 2 cups water
  • 2 tbsp olive oil

For Ground Taco ME’EAT

  • 12 Corn Tortillas
  • 3 tbsp oil
  • 1 cup cheese (optional cheese alternative)
  • salt or Spike seasoning
  • Favorite hot sauce or salsa
  • Green onion


  1. For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
  2. Add the entire contents of the Ground Taco ME’EAT and stir well.
  3. Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
  1. For the tacos, cut Tortillas into mini shells. Cut 2-inch rounds with ring mold or firm plastic cup.
  2. Heat a large pan to medium heat. Add 1 tbsp oil to the pan and then as many mini shells as you can fit.
  3. Flip tortillas and add cheese followed by the Ground Taco ME’EAT. Fold all tortillas over. Remove the mini taco smasher from the pan and place onto your serving dish.
  4. Dust the mini taco smashers with salt or spike seasoning. Serve with your favorite salsa or hot sauce or both.
  5. Add green onions to tacos.
