Mini corn tortillas stuffed with RollinGreens Ground Taco ME’EAT and cheese served with your favorite hot sauce or salsa.

Ingredients
For Ground Taco ME’EAT
- 1 Bag RollinGreens Ground Taco ME’EAT
- 2 cups water
- 2 tbsp olive oil
For Ground Taco ME’EAT
- 12 Corn Tortillas
- 3 tbsp oil
- 1 cup cheese (optional cheese alternative)
- salt or Spike seasoning
- Favorite hot sauce or salsa
- Green onion
Instructions
- For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
- Add the entire contents of the Ground Taco ME’EAT and stir well.
- Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
- For the tacos, cut Tortillas into mini shells. Cut 2-inch rounds with ring mold or firm plastic cup.
- Heat a large pan to medium heat. Add 1 tbsp oil to the pan and then as many mini shells as you can fit.
- Flip tortillas and add cheese followed by the Ground Taco ME’EAT. Fold all tortillas over. Remove the mini taco smasher from the pan and place onto your serving dish.
- Dust the mini taco smashers with salt or spike seasoning. Serve with your favorite salsa or hot sauce or both.
- Add green onions to tacos.
