RollinGreens Ground Taco Protein & rice topped with tomatoes, green onion, lime, and sour cream.

Instructions
For Ground Taco Protein
- 1 Bag RollinGreens Ground Taco Protein
- 2 cups water
- 2 tbsp olive oil
For the Rice
- 1 cup long grain white rice
- 2 cups water
- 1 tbsp olive oil or butter
- 1 tsp sea salt
For the Toppings
- 1 Roma tomato or 4 cherry tomatoes
- 1-2 sprigs green onion or cilantro
- 1 lime
- ¼ cup sour cream (optional dairy free alternative)
Instructions
- For the Ground Taco Protein, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
- Add the entire contents of the Ground Taco Protein and stir well.
- Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
- For the rice, in a different pot with lid, cook the rice. Wash rice in a grain strainer and allow it to drain before adding rice to pot, 3-5 minutes. After the rice has been drained, add to pot with two cups of water with oil and salt. Bring water to boil, once rice is boiling, reduce heat to low and cover. Cook for 12-15 minutes or until rice is fully cooked. Uncover the cooked rice and add the cooked Ground Taco Protein to rice and mix.
- Cut green onions onion fine and add to top of each bowl or plate. Cut the lime into wedges and place on the side of bowl or plate.
- Drizzle sour cream on top or scoop a dollop in the middle of your dirty rice.
