Pancakes, Salt & Pepper ME’EAT patty, and a fried egg breakfast sandwich covered in Maple syrup.

Ingredients
For Classic Salt & Pepper ME’EAT
- 1 Bag RollinGreens Salt & Pepper ME’EAT
- 2 cups water
- 2 tbsp olive oil
For the Sausage Patty
- ½ tsp fennel seed
- ¼ tsp sugar
For the Egg
- 1 egg
- 1 tbsp butter or olive oil
For the Pancake
- 1 cup flour
- ½ cup milk or water
- ¼ tsp baking powder
- ¼ tsp salt
- 1 T butter or olive oil
- 1 egg
For Classic Salt & Pepper ME’EAT
- 2 tbsp Maple syrup
Instructions
- For the Classic Salt & Pepper ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
- Add the entire contents of the Classic Salt & Pepper ME’EAT and stir well.
- Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
- For the sausage patty forming, portion out ¼ cup of cook ME’EAT and place in a small bowl. Add fennel seed and sugar and mix while ME’EAT is still hot. For the sausage patty, mix the fennel seed and sugar with a ¼ cup ME’EAT and place in the center of a piece of cellophane with a small lid of a jar or ring mold below. Compact the patty firmly. Place the patty in refrigerator or freezer to allow to harden.
- For the pancake batter, in a medium mixing bowl add the flour, salt and baking powder and mix. In a separate small mixing bowl add all wet ingredients labeled (pancake mix): milk or water, butter (melted), and egg and mix well. Make a whole in the center of the flour mix and add the contents of the wet bowl. With a whisk, mix until there very few clumps left. Add a small amount of butter or oil to a heated skillet. Place the ring part of a jarring top to the pan and place 1/8 cup pancake mix inside and add a touch of Maple syrup. Flip griddle cake once you see air bubbles rising throughout the cake. Cook on other side for another 2-3 minutes or until cooked. Repeat steps to make another griddle cake.
- For the sausage patty cooking, in the same skillet or pan heat to medium and add a touch of butter or oil. Remove cellophane from patty and cook for 2-3 minutes on each side. Place on one griddle cake.
- For the egg, in the same pan, add butter or oil and crack egg inside a ring mold or ring of a jarring lid. Cook for 1-2 minutes and remove ring and flip, cook until desired softness of egg. Remove from pan and place on top of sausage patty.
- Top egg with the other griddle cake and serve with Maple syrup.
