Cheezy Street Tacos GROUND TACO

Street Tacos with RollinGreens Ground Taco ME’EAT and cheese, topped with onion and cilantro served with lime wedges.

Serves 1-2 People


For Ground Taco ME’EAT

  • 1 Bag RollinGreens Ground Taco ME’EAT
  • 2 cups water
  • 2 tbsp olive oil

For the Tacos

  • 6-8 corn tortillas
  • 2 cups cheddar cheese (optional cheese alternative)
  • 2 tbsp oil
  • ¼ cup onion
  • Cilantro
  • Lime wedges


  1. For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
  2. Add the entire contents of the Ground Taco ME’EAT and stir well.
  3. Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
  4. For the tacos, in a large pan, heat to medium and add 1 tsp of oil.
  5. Place one tortilla at a time in the pan. Add 1/8 cup of cheese and 1/8 cup of cooked Ground Taco and fold in half.
  6. Flip and cook on other side. Cook both sides until crispy and brown. Repeat cooking steps for each taco. Place all tacos on a serving plate.
  7. Dice onion and add to tacos. Cut cilantro and add to tacos and serve with lime wedges to finish the dish.
