Street Tacos with RollinGreens Ground Taco ME’EAT and cheese, topped with onion and cilantro served with lime wedges.

Ingredients
For Ground Taco ME’EAT
- 1 Bag RollinGreens Ground Taco ME’EAT
- 2 cups water
- 2 tbsp olive oil
For the Tacos
- 6-8 corn tortillas
- 2 cups cheddar cheese (optional cheese alternative)
- 2 tbsp oil
- ¼ cup onion
- Cilantro
- Lime wedges
Instructions
- For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
- Add the entire contents of the Ground Taco ME’EAT and stir well.
- Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
- For the tacos, in a large pan, heat to medium and add 1 tsp of oil.
- Place one tortilla at a time in the pan. Add 1/8 cup of cheese and 1/8 cup of cooked Ground Taco and fold in half.
- Flip and cook on other side. Cook both sides until crispy and brown. Repeat cooking steps for each taco. Place all tacos on a serving plate.
- Dice onion and add to tacos. Cut cilantro and add to tacos and serve with lime wedges to finish the dish.
