Chilicuterie GROUND TACO

RollinGreens Ground Taco ME’EAT, black beans, and crushed tomatoes full of flavor served with an assortment of toppings and sides.

Serves 4-6 people

Ingredients

For Ground Taco ME’EAT

  • 1 Bag RollinGreens Ground Taco ME’EAT
  • 2 cups water
  • 2 tbsp olive oil

For the Three Bean Chili

  • 1 large can crushed tomatoes
  • 1 can tomato sauce
  • 1 can water
  • ½ can black beans
  • ¼ yellow onion
  • 1 tbsp chili powder
  • 1 tsp cumin

For the Charcuterie Board

  • 2 cups shredded cheddar cheese (optional cheese alternative)
  • Sour Cream (optional dairy alternative)
  • 3 sprigs green onion
  • ½ red onion
  • ½ yellow onion
  • Pickled jalapenos
  • Fresh jalapenos
  • Salsa
  • Mini corn bread bites
  • Corn chips
  • Mini flour tortillas
  • Mini pretzel bites

Instructions

  1. For the Ground Taco ME’EAT, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
  2. Add the entire contents of the Ground Taco ME’EAT and stir well.
  3. Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
  4. For the chili, sauté onion in the same pot after the ground taco has finished cooking, add the Ground taco ME’EAT, both cans of tomato, and one can of water. Stir and turn heat to medium.
  5. Wash beans in colander and add ½ the can of beans to pot. Stir. Salt to taste and allow to cook covered for 10-15 minutes. Taste chili to make sure you add the right amount of salt. Add the chili powder, cumin and stir. Cook for 10-20 minutes.
  6. For the Charcuterie board, use your largest cutting board, and place the chili pot at one end. Then start filling in the board with all the ingredients and sides, making the board full.
