Chic’Ken Green Chili

Chic’Ken Green Chili CHOPPED FAJITA

Serves 1-6 people

Ingredients

For the Chopped Fajita Chic’Ken

  • 1 Bag RollinGreens Chopped Fajita Chic’Ken
  • 2 cups water
  • 2 tbsp olive oil

For the Green Chili

  • 8-10 Anaheim Chilies
  • 1 onion
  • 3-5 garlic cloves
  • 1-32 oz. vegetable stock
  • 1 can diced tomatoes
  • ¼ tsp dried oregano
  • 1 tsp sea salt

Instructions

  1. For the Chopped Fajita Chic’Ken, bring 2 cups water and olive oil to a boil in a medium pot or pan. Reduce heat to medium low.
  2. Add the entire contents of the Chopped Fajita Chic’Ken and stir well.
  3. Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
  4. For the green chili, preheat oven to 400 Degrees F. on a baking, rub Anaheim chilies in olive oil and a touch of salt to each. Bake for 10-15 minutes, or until skins are peeling off the pepper. Remove from the oven and wrap in foil or in a bowl topped with cellophane. Allow to steam for 5-10 minutes. Remove skins and as many seeds as possible. Dice into 1-inch pieces.
  5. In a large pot, heat to medium and add oil followed by the diced onion. Cook for 3-5 minutes. Add diced garlic and oregano and stir. Add half the chilies and blend.
  6. After blending, place back on medium heat and add the other haft of diced, cooked Anaheim chilies and the strained can diced tomatoes. Add cooked Chopped Fajita Chic’Ken and cook for 20-30 minutes.
  7. Serve in a bowl with a tortilla or use to smother any burrito or enchiladas.
