How We Got Rolling.
From our food truck to your family table.
Our story began back in 1980, as the original Boulder, Colorado organic food truck. Co-founder Ryan Cunningham’s (Chef Ko's) parents took to the streets of Boulder to serve their delicious, wholesome meals.
Inspired by this love of cooking, Ryan became a trained chef. In 2011, the RollinGreens food truck was revitalized by Chef Ko and his wife, Lindsey to bring local, organic food back to Boulder.
The RollinGreens food truck soon became a staple of Boulder’s popular Farmer’s Market, and the couple catered hundreds of events. Hungry customers lined around the block for hours, waiting on Chef Ko’s millet tots and other innovative and delicious plant-based creations.
Rolling Into Stores.
After five years as a farmer’s market staple and a successful catering service, the duo couldn’t keep up with the Millet Tot demand. In 2016, Chef Ko and Lindsey decided to branch out by launching their popular tots at local and national retailers. In just a few short years, RollinGreens has expanded into more than 4,000 stores nationwide.
Shark Tank Takes A Bite.
In May of 2020, the national incubator TV show “Shark Tank,” took notice of our Millet Tots and Cauliflower Wings. On the Season 11 finale, the Cunningham’s struck a deal with Robert Herjavec.
Driving Towards The Future.
Today, RollinGreens rolls on with new, innovative menu ideas simmering in our kitchen, including the launch of our new shelf-stable Plant-based Ground Taco Pack. In just a few short years, we’re now found in 4,000 stores across the nation. With this expansion, we are now able to bring our food truck favorites directly to your doorstep, with home delivery on direct orders from our website.
One thing that remains the same since the very beginning, is our commitment to inspire socially conscious consumers to live with purpose by eating good food that provides great fuel to live our best lives.
