A fresh and flavorful high protein taco salad made with our Ground Taco Protein, black beans, crisp romaine, creamy avocado dressing, and colorful vegetables. Created by Chef K, this easy taco salad recipe is perfect for meal prep, healthy lunches, Taco Tuesday, or a quick weeknight dinner.

Ingredients

For Ground Taco Protein

1 bag RollinGreens Taco Protein
2 cups water

For The Salad

1 head romaine lettuce, chopped
1 cup black beans
1 cup corn
½ cup cucumber, diced
½ cup jicama, diced
½ cup red onion, chopped
1 cup tomatoes, chopped
1 large avocado, diced
¼ cup cilantro, chopped
1½ cups cheddar cheese, shredded

For the Avocado Dressing

½ onion
1 medium ripe avocado
2 garlic cloves
3 tbsp fresh lime juice
4 sprigs cilantro
½ tsp salt
½ jalapeño
¼ cup water

Instructions

  1. For the Taco Protein, bring 2 cups water to a boil in a medium pot. Add the entire packet of RollinGreens Taco Protein and stir well. Allow the protein to hydrate and absorb the liquid until fully cooked.
  2. For the Avocado Dressing, add the onion, avocado, garlic, lime juice, cilantro, salt, jalapeño, and water to a blender. Blend until smooth and creamy. Add additional water as needed to achieve your desired consistency.
  3. In a large bowl, combine the chopped romaine lettuce, black beans, corn, cucumber, jicama, red onion, tomatoes, avocado, cilantro, and shredded cheese.
  4. Add the prepared Taco Protein and gently toss until evenly combined.
  5. Drizzle with the avocado dressing and garnish with additional cilantro and cheese if desired.
  6. Serve immediately and enjoy this fresh, protein-packed taco salad.
