Vegan Mac & Cheese, or Mac n’ Wing bowl, is delicious, vegan and made with less than 8 ingredients.

Gluten Free Macaroni Noodles, Cashew Cream and Carrot Sause topped with Spicy Green Buffalo Cauliflower Wings & Roasted Broccoli 

Ingredients:

  • 1 Bag of RollinGreens Spicy Green Buffalo Cauliflower Wings (with Sauce pack included)
  • One Box or Bag of Macaroni Noodles (GF is Fine)
  • ½ lb. Cashew pieces (+3Cups Water)
  • 1 Carrot
  • 2 Garlic Cloves
  • ¼ Cup GF Flour
  • 3 T Olive Oil
  • 1 Heads Broccoli

Spicy Mac’ n Wings Bowl with Roasted Broccoli

Instructions:

Preheat oven to 400 F. Convection Bake. Once oven is up to temp, place frozen cauliflower wings on baking tray. Bake Wings for 12-15 minutes, or until golden brown. You can also air fry at 400F for about 8-10 minutes or until crispy.  Remove Sauce Pack from bag and place into a bowl unopened in room temperature water.

In a Large Saucepan, fill ¾ full of cold water and a heavy pinch or two of salt. Bring water to boil then add the pasta. See cook time on pasta packaging. Strain once done and set aside. 

Wash all Broccoli, dry, chop into two-inch pieces and set on a baking sheet. First cover Broccoli with ½ of Olive Oil (1-1/2 T) and a touch of Salt. Bake for 10 minutes. Remove from oven and place next to other prepped items

While Wings are cooking, in a blender add: Cashew Pieces, Carrot, Garlic, Water, and blend. Once completed transfer to a small saucepan and place on low heat. Stir often.

Using the same pan just used for the pasta, add Olive Oil and GF Flour to hot pan (Med Heat). Stir together making a rough, now add your Cashew & Carrot Sauce. Mix rough with a whisk until fully incorporated. Salt to fit keeping in mind the pasta, Broccoli and wings are already salted.

Place Noodles in sauce and mix until all noodles are covered. Now Find your Bowl. Next add ½ of mac n Cheese to Bowl. Now add 2-3 Wings, 3-4 Broccoli Pieces & top with Spicy Green Buffalo Sauce
