Slow Cooked Tomatoes

Soft dices of tomato slow cooked with Olive Oil, Onion & Garlic

Ingredients: Appetizer

  • 1-box of Onion & Sea Salt Tots
  • 3-4 Roma Tomatoes
  • 2 T Olive Oil
  • 4 Cups water
  • .1 oz. Salt
  • ½ Onion
  • 2 Cloves Garlic
  • 3-leaves of basil

Instructions:


Tomatoes:
In a sauté pan, place on med-low heat and add 1-2 T of oil. Add onion and cook until onions are translucent. Add garlic to pan and stir. Cook for 3 minutes then add washed stewed tomatoes. Cover with parchment and turn to low. Cook for 30 minutes.

Tomatoes:
In a pot bring 3 Cups water to boil and reduce heat to med-low. Place tomatoes on a cutting board, with a paring knife, make an X on the non-stem end. Cut into tomatoes ¼ of an inch.

Place tomatoes into water and turn off heat. With a slotted spoon, remove tomato one at a time once one’s skin has split down the side. This should only take 60-90 seconds so stay at the pot and constantly stir, allowing all the tomatoes to get an even steep.

In the ice bath blanch each tomato once it splits. Keep in ice water for 10 seconds, then place on cutting board. Do this to all tomatoes.

Cut stem side off on all tomatoes and then then deskin all. Cut each tomato into ¼ inch pieces.

Cook Millet Tots at 375F for 15 minutes for until crispy.

Assembly:
Top onion and sea salt Millet Tots with slow cooked tomatoes, and top with chopped fresh basil.
