Start by caramelizing the onion. In a Stainless steel pan, on med-low heat, add cut onions. No need for oil, just continue to stir onions when they start to brown, add vegetable stock or H20, 2 tablespoons per stir (Onions can be done ahead of time). Continue this process for about 30 minutes. Start baking off Original Millet Tots at 375 for 15 minutes. In a cast iron skillet, oil & mushrooms to pan, Salt & Pepper and sear them with another pan on top pressing the mushroom. After both sides are golden brown, pull off pan and let rest. Finely cut Shitake mushrooms, place in bowl to start assembly of Canapes. Place tots on serving platter, top Kite Hill spread on all Millet Tots, caramelized Onions, mushrooms and Chives to finish.
