Millet Mash with Garlic Gravy
Ancient Grain Millet and Cauliflower Mash served with Garlic Gravy
Ingredients: 6 Servings
- 1 box Onion & Sea Salt Ancient Grain Tots or 2 Cups Raw Millet
- 2 tbsp Olive Oil
- 2 Cups water
- 1 tbsp Salt
- ½ head of raw cauliflower
- 1/2 Yellow Onion
- 3 cloves Garlic
- 4 Cups Veg Stock (one Veg Stock bout in Stores)
- 2 tbsp starch (Arrowroot) or flour
In a large pot, turn heat to med low and add 1 tablespoon of olive oil to pan. Cut onion into apple wedge slices, and cut florets out of the cauliflower, and add to pot. Slow cook and turn once golden brown on each side. Remove Tots from freezer and add to pot. Add 2 cups of water and cover. Cook for 20-30 minutes or until grain is fully cooked. Once done, mash with potato masher. Place in serving bowl and cover.
In a small saucepan, turn heat to med low and add 1 tablespoon of olive oil to pan. Cut garlic and add to pot. Slow cook for 2 minutes and add the flour. Cook until golden brown. Add vegetable stock and cook for 7-10 minutes until hot. Salt and pepper to your liking.
