Southwestern Dirty Rice

Southwestern Dirty Rice GROUND TACO

RollinGreens Ground Taco ME’EAT & rice topped with tomatoes, green onion, lime, and sour cream.

Serves 4-6 people

Ingredients

For Ground Taco ME’EAT

  • 1 Bag RollinGreens Ground Taco ME’EAT
  • 2 cups water
  • 2 tbsp olive oil

For the Rice

  • 1 cup long grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp sea salt

For the Toppings

  • 1 Roma tomato or 4 cherry tomatoes
  • 1-2 sprigs green onion or cilantro
  • 1 lime
  • ¼ cup sour cream (optional dairy free alternative)

Instructions

  1. For the Ground Taco ME’EAT, bring 2 cups water, and olive oil to a boil in a medium pot or pan. Reduce heat to medium.
  2. Add the entire contents of the Ground Taco ME’EAT and stir well.
  3. Cook 7-10 minutes, stirring occasionally, until most of the moisture has been absorbed. Turn heat to simmer.
  4. In a different pot, cook the rice. Wash rice fully before adding it to pot and add two cups of water with the oil and salt. Bring rice to boil. Once rice is boiling, reduce heat to low and cover. Cook for 12-15 minutes or until rice is fully cooked.
  5. Add the cooked Ground Taco ME’EAT to rice and mix.
  6. Cut green onions and add them to the top of each bowl or plate.
  7. Cut lime into wedges and place on the side of bowl or plate.
  8. Drizzle sour cream on top or scoop a dollop in the middle of your dirty rice.
